Description of the procedure for the validation of prior learning 

The candidate completes the application form for national vocational qualifications.

Certification

In the process of consulting, the candidate prepares a personal collection folder, evaluated by the commission, and if so the candidate provided credible, valid and relevant evidence of knowledge, skills and qualifications competences from a professional standard, they may:

·          recognize the contents of the professional standard as a whole,

·         recognize the content of the professional standard in part and determine the knowledge, skills and competences it will verify,

·         does not recognize any content of a professional standard because the candidate does not demonstrate any skills, competences and professional standards, and will verify, mutatis mutandis, the entire professional standard.

Methods of verification
A. The candidate will be tested by the method with a product with a defense if it fails to prove to the extent sufficient or to any required knowledge, skills and competencies from the following operational works:
- strategic planning of the work of food and beverage departments in cooperation with the management
- proactively and innovatively participates in the creation of new sales products, sales packages, services and sales prices with sales department, marketing service and company director
- makes calculations for dishes and drinks and calculates costs and, in cooperation with the sales department, generates sales prices of services

The candidate can produce the product before checking. Instructions for preparing the product and the task that the candidate with the product must carry out is pre-determined by the commission after reviewing the personal collection folder. The candidate in the product demonstrates the control of the required professional competencies according to the requirements of the professional standard. When the product is presented at the verification, an oral defense of the performed task is carried out, which includes checking the skills and knowledge related to individual work in accordance with the professional standard Manager for the field of food and beverages.

B. The Commission will examine the candidate with the method of practical examination with a defense in case it does not prove to the extent sufficient or any required knowledge, skills and competences from all other operational works. The candidate in a practical work order proves the control of the required professional competencies according to the requirements of the professional standard. In addition to the practical task, an oral defense of the completed task is carried out, which includes presentation of the work performed and verification of the knowledge related to individual work in accordance with the professional standard Manager for the field of food and beverages.

Documents needed 

Confirmation that a candidate has:
-minimum secondary education or secondary professional education and 5 years of working experience in the field of catering or
-at least secondary vocational education and 8 years of working experience in the field of catering
